Dinner tonight...

My hubby is begging me for the Eggplant again.  I'll make it again, only perhaps serve a marinara sauce this time for some extra flavor.  You can't ask for an easier recipe, that's for sure.

It's on the Healthy Cooking forum.  I think its called Oven Fried Eggplant slices or something like that.  Get your butt over there and look, there's a vast array of nice healthy recipes on it!
