Barbecuing in the oven.

Here's a good one.

Get some top sirlon grilling steaks.
Spice them as you like.
Use a meat hammer and hammer the
steak to tenderize and push spices into meat.
Cook in very little oil in fry pan .
Cook each side on medium heat for three minutes
each side. Pop into oven at 375 degree for 15 minutes ot less
depending on how well done or rare you like it.
Be sure to turn steak over halfway through.
Go again with the greens, they balance your meal and
can cut cholestorol and stomach gas. I add carrots and
potatoes mashed with a light gravy.

Beef oxo cubes, flour, pepper, salt and water make a great gravy.
Don't burn the gravy, it's easy to do. A few chives added to
the gravy helps the taste.

Mix flour and water well, put through sieve for smoothness,
add oxo and other ingredients, simmer until right thickening
has happened. The longer you cook it the thicker it gets.
Eat and enjoy.

The spices are usually garlic powder, onion powder and seasoning salt. There is an old trick that helps to tenderize it before cooking and that is instead of garlic powder, you take a garlic clove, crush it and rub lightly  over both sides of the steak. Let it sit for an hour in the fridgeand then put on the onion powder and steak seasoning and barbecue sauce. Once it is cooked you wrap it in silver foil and send it to me. That way I can tell if you did it properly. Most of times, where I am the judge, it takes at least seven or eight trials and deliveries before I think you have it right. Oh, by the way, I am partial to one inch thick T-bones but that is for another time. It might be appropriate, seeing as I am  to test your barbecuing, that you also send an excellent wine, garlic bread, roasted potatoes and, of course, toothpicks.

I used,"Barbecue," for want of a better word. It's not baking and it's not roasting. I neglected to mention that you smear it with your favorite sauce. That in itself gives it a closer relationship to barbecuing than anything else.
