The spices are usually garlic powder, onion powder and seasoning salt. There is an old trick that helps to tenderize it before cooking and that is instead of garlic powder, you take a garlic clove, crush it and rub lightly over both sides of the steak. Let it sit for an hour in the fridgeand then put on the onion powder and steak seasoning and barbecue sauce. Once it is cooked you wrap it in silver foil and send it to me. That way I can tell if you did it properly. Most of times, where I am the judge, it takes at least seven or eight trials and deliveries before I think you have it right. Oh, by the way, I am partial to one inch thick T-bones but that is for another time. It might be appropriate, seeing as I am to test your barbecuing, that you also send an excellent wine, garlic bread, roasted potatoes and, of course, toothpicks.

I used,"Barbecue," for want of a better word. It's not baking and it's not roasting. I neglected to mention that you smear it with your favorite sauce. That in itself gives it a closer relationship to barbecuing than anything else.
