Cream of Potato Soup

a couple of you asked how i make the potato soup, so here it is. Its a rich, full meal all in one, (and i recommend it for recovery, its very good for you, lol) This makes a huge serving, so be sure to use a large stock pot (preferably non stick if possible). You'll have leftovers for a day at least =)

3-5 lbs potatoes (i use baby reds with skins still on, but use whatever you prefer)
2 large onions
3/4 gallon milk
3/4 block Velveeta Cheese
1 stick butter/margarine
3 TBS chicken bouillon powder
1 to 2 tsp course ground black pepper
(i add no salt to this because you get enough from the cheese and boullion)
Parsley (fresh sprigs are best, but dry flakes are ok if you have no fresh)

Ok....i like very large slices of onions in my soup, so i cut those up first and get them boiling in a separate pot becasue they take much longer to get tender than the taters do) So

Cut and Boil onions
cut and boil potatoes in large pot; drain when near tender.
Return taters to  pot, add in the butter, milk and cheese and other ingredients. Add onions in when they are tender. Let simmer til cheese is all melted.

Now.. I also put my own dumpling/drivels (sp?) in it too. If you want to do this;
6 eggs
2 cups flour

mix eggs up with whisk, add flour and stir til mixed well. DRop spoonfuls into soup and let it cook about 5 more minutes until they are done. THese dumplings are not fluffly- they are more like large egg noodles kind of. if you want fluffier ones, add more flour.  You can also add stuff into these for more flavor like rosemary, parsley, pepper,etc.  

also you can fry up some bacon and crumble it into the soup, or cubed ham if you simply must have meat in your soups, lol.

you know, scallions do sound good, but I'd add them just at serving time, or perhaps some chives.

I love potato soup and my mouth is watering thinking about it.

Hmm...do you think if I used 2% cheddar instead of velveeta and skim milk it may still work out well? (Okay, with a stick of butter we're going WAY up in calories anyway, but every little bit helps!!!)

My wife has the horifying idea I should learn to cook. I tried explaining to her it just...never...works...out...well.

How many bowls would this make too? Is this about 4 regular bowls?

Here comes another 10 lbs. WOW...that sounds so yummy. It is beyond cold here and the roads are sheer ice. Good day to stay in and eat soup. Then again, is there a bad day to do that? LOL

Thank you for the recipe.  Sounds like a perfect cold day soup.  It hasn't been above zero very often in the past week or so here in SD.  I e-mailed it to my wife and we are going to make it sometime this week.  Awesome!!!!
