My wife is 47 and generally healthy. Over th last several years she has developed a reaction to a number of seemingly unrelated triggers which end in severe mucus production cough and choking.She describes it as drowning in spit and it feels as if her throat is closing. She has been taken to hospital from work because of the severity. Triggers include chemical odors, wood chips, perfumes, stong animal smells, musk, going from warm to cold, from cold to warm, laughing, exertion, and lately just spontaneously with no apparent trigger. This has been progressively worsening over the last several years.
She has tested negative on allergy testing, negative for asthma, no apparent problems via chest xray. And the GP, Respirologist and Allergist we have seen all appear stumped.
Any suggestions would be appreciated

I hope you have better luck with the medical community to this mucus problem. I have spent alot of time on the internet researching it as I have a similar problem.  I went thru trying to eat certain things at night to drag the mucus out of my throat and now have to have a drink near me at virtually all times.  
I did find a 2 items that do seem to help.  I will pass them on to you here.  Understand I am no medical professional, Just a frustrated person who finally decided to help myself.
1.  this will sound silly, but chocolate, either thick like thte kirkland chocolate weightloss chakes, or in the form of candy type, allows me to "cough" out the sticky mucus from my throat.  Without the chocolate it takes forever and sometimes will not budge and simly stays there and gags me.

2. I will copy my post to others here because of its length.  I truly hope this helps her:

I have had this same problem for about 10 years as well.  To the point of wishing i could simply die.  I progressed to the point of not sleeping for more then 5-10 minutes ever becasue of the choking.  I saw the docs and they all said "I can't help you"
I found an add on the internet that was for treatment of Post Nasad Drip and bought the product -- It was 3 essential Oils. I paid $90 and had to wait for them to arrive and later found I could buy the products online or locally for much less.  What you need is (Cinnimin Spelling) leaf extract, Clove extract, and Thyme extract) and what is called a facial sauna ( one is called a head and chest breath steam at walgreens).  You place a drop or 2 of each in the measured amount of water and allow the device to heat up to produce steam.  You then breath this steam in for about 2-3 minutes.  
Understand this process will tell you if you are using enough or not or too much.  Just breath normall inot your nose.  If you cannot breath thru your nose breath thru your mouth eventually your nose will clear after a few days.  
Do this treatment every couple hours for the first 2 days then once a day for the next week, then once a week after that.
It was magic for me, after all that choking and hacking to try to clear my throat and lack of sleep, sfter the first day, I slept peacfully for 8 hours.  I had not done that in over 5 years.  This was a godsend.  I hope this helps you as well.

All these symptoms are leading to the possibility  of chronic post nasal drip. Post-nasal drip is mucus accumulation in the back of the nose and throat leading to, or giving the sensation of, mucus dripping downward from the back of the nose. Post-nasal drip can be caused by excessive or thick secretions, or impairment in the normal clearance of mucus from the nose and throat.

Various causes for chronic post nasal drip are allergies,viral infections,deviated nasal septum,chronic sinusitis,adenoid enlargement and diseases like sarcoidosis and GERD.

Pls discuss these options with an ENT specialist and get your wife thoroughly examined.
