Apple cider vineger, is it worth it?

A couple of weeks ago my microbiologist profesor told me that apple cider vinegar has a lot of health benifets and that it can also be use to treat diabetes? this captured my since my mom has type two diabetes. i did some digging around the internet and found some studies that prove this but I'm not convinced, Is there anyone out there that has tried apple cider vinegar? and if so is it wotth it or is it to risky?

Does this also mean it restricts the absorption of the antioxidants and minerals in the food, meaning it will be excreted before these can be absorbed?  In other words, does the use of apple cider vinegar, according to your analysis, promote cancer and autoimmune disorders by preventing the absorption of necessary protective nutrients?  Remember, all vegetables are carbohydrates, and carbohydrate foods are the main sources of most of our nutrients other than fat and protein.  And by the same token, if someone is taking medication, does it also prevent the absorption of that?  Some herbs can do this, particularly those that treat digestive problems, and must be take apart from food and medications for this very reason.  So are you creating another problem to treat blood sugar with this method?

According to latest scientific studies, vinegar reduces the rise of blood sugar levels after you have eaten a meal and when taken at bed time, vinegar lowers morning blood sugar levels. The vinegar tonic restricts the absorption of high-carbohydrate foods which lessens the blood sugar increase that usually happens after a meal.

2007 study of 11 people with type 2 diabetes found that taking two tablespoons of apple cider vinegar before bed lowered glucose levels in the morning by 4%-6%.

How much pectin is in the vinegar?  There's a lot in apples, but how much fiber is left in the vinegar?  And is pectin any better than other water soluble fibers in reducing blood sugar?  My guess is, there's not enough fiber left in vinegar as opposed to whole apples for this to be the reason, if any, that apple cider vinegar would lower blood sugar.  I would think a whole change in diet would have to be undertaken to see an effect, not just taking the limited amount of vinegar a person can healthfully take in every day, which isn't all that much.  I would guess one apple would provide a whole lot more pectin if that's the key.  Just my thoughts.

It's not risky, but don't know how it would control diabetes.  Type 2 Diabetes is a dietary disease, so it's possible it's beneficial effect on some people's digestion might be in play here, as well as its bitter qualities, but others don't do well on it -- it depends on the acid/alkaline state of a particular person's digestive system.  Good for those who need it, maybe not so much if you don't.  People have been touting this food for many many years, and there are books on the subject going back years and years if you want to research it.  If you do use it, make sure you use only organic pure apple cider vinegar with the mother in it, which you can find at any health food store.
