Elevated ESR of 535

Female 45.  I have keloid scarring.  2011 had gastrointestinal bypass surgery.  9/2014. Had tummy tuck, thigh lift, liposuction.  Had some complications with open wounds, which did not close until 2/15.  I was in terrible amount of pain that in April 2015 I had no clue my appendix burst, It had been burst for a week or more.  My whole abdominal cavity was full of infection,  Was rushed by ambulance to hospital an hour away to have emergency surgery.   Even though I was full if infection not once did I run a fever.  

May 2015 ,three weeks later returned to hospital.  Infection was not all cleaned out and abcessed closing off my small intestine.    Sent home with pic line for antibiotics and accordion drain. Again was admitted to hospital with a temp of 98.5

   8/2015  had some abcessed come to the surface of abdomin and burst thru the skin.  Surgeon said it was caused from stitches that did not dissolve from procedures that was  done 9/2014.  Had surgery again 9/2015 was open back back hip to hip and all the way up my abdomin to just under the breasts.  Again had some complications with open wounds and pain.  
  Started to feel sick several times a month with severe flu like symptoms. Body aches,  chills, Weight gain, headaches, blurry vision, dizziness sometimes when I would stand.    Constant pain in ab area with shooting pains.  It was like some days my brain was in a complete fog and could not think straight.    The went on for months. I would see family physician one a month and she passed it off as side affects caused from surgery in 9/2015.  1/2016 was sent to see a new plastic surgeon.  He could not help me so he sent me to see one of the best plastic surgeons in my state.  
The flu like symptoms got worse and started to last several days.  April 2016 I finally get in to see the new surgeon.  He believes it's all internal in my ab area and that I should see another specialist.  He was certain that the issues I was having had to do with the appendix bursting last year.   He was rather confused why my family physician had not had any blood work or any type of tests run considering I was having these problems for months.  
   Finally my DR.  Decided to have full blood tests and ct scan done, after a not so nice confrontation between the two of us.  For months I was basically ignored and told The pain I was having was from the extreme weight gain and it was stretching my tummy tuck back out.  That I was gaining weight from not watching what I was eating.  Doc even put me on 37.5 mg of phentermine for several months, but still gained weight even though I was really not eating much.  I don't drink soda, I don't eat any type of fast food.  I don't smoke, don't drink, don't do any kind of street drugs.   I had gained a total of 50 pds in 7 months.
   Kidneys, liver, white blood cell count all came back normal.  Iron was a little low.  But the ESR was off the chart.  Doc told me 0-25 is normal but mine is 535.  I asked the doc what ESR is I was told it was the inflammation in my body and was going to need further testing so they could find out what was causing it to be so high.  I asked three times to have doc repeat herself so I was making sure that I was hearing it correctly.  I asked her with it being that high is that why I am so sick, is that why I am gaining weight?  She said yes that with the level that high I would be extremely ill and I have severe inflammation in my body.   Further blood tests were ordered and now waiting on results.  Also waiting on CT results.  

  My quality of life has gone down hill in the last year and half.  I can't do the things I use to do.  Some days I can barely move and spend the day in bed.  I use to be a very outgoing person on the go 7 days a week. Always pushing myself.   Even though I was over weight I worked three part time jobs, raised a family, put myself thru college.  I earned a associates, and a dual bachelor degree.  I came from nothing, I had nothing.  I barely got by.   I sacrificed everything for my children.  When I found out I had type II diabeties, I watched what I ate, did step aerobics twice a week.  For over a year I was under my dr's care.  Nothing worked, couldn't loose any weight and could not get blood sugar under control.  Next step was insulin.   That's when I decided to have the weight loss surgery, with my doc's blessing.  
    I now run a very successful business, have 4 rental homes, I have a small hobby farm with chickens, a couple of emu's, cats, dogs.  I was hoping to have a couple of llamas, goats, cows, and a pig some day. I grow my own fruits and veggies.  I use to multi task like a son of a gun.  

I lost 160 pds after the surgery, was healthy, excercised every single day, made sure I ate well and got 90 grams of protein every day.   Every time a new DR.  Says sorry I can't help you, I break down.  I am on the verge of loosing everything I sacrificed and worked so hard for.

Please can someone help me understand what the heck is going on with me and what possibly could be the reason why my ESR is so high?  I am about ready to have a nervous breakdown.  I apologize for this being so long.  I am at my wits end.  The doc I have now took over the office about two years ago.  It's like she completely ignores everything I say to her.  The nurse at my doc's office has been there for years.  Even she suggested on several occasions that the doc run blood test.  But the doc continued to ignore both of us.  

Please any advice would help.
