celiac disease

I'm wondering if there is some kind of research done about how many people suffer from celiac disease at the moment and what is the concentration throughout the US. For ex. How big is the concentration of this disease sufferers in the D/FT W area in TX?

I forgot to mention: the reason why I want to know is because we need restaurants to start offering gluten free food. By that I mean gluten free bread, gluten free pasta etc..... Do you know that if you eat a salad or a soup at a restaurant you might still be consuming gluten?
Gluten is use as a preservative on meats and rice and as a thickener in soups and sauces, it's also in some salad dressings. So it's not safe to eat at a restaurant. The majority of the waiters don't know the hidden ingredients in the meals. I learned it the hard way. Guess what? cornbread has gluten.

Fortunately there are restaurants now that offer gluten-free menus if you ask.  It takes checking ahead, but there are restaurants who are trying to cater to our needs.  Try googling "Gluten-free restaurants, Dallas, TX"  I got this:

you can bring your own salad dressing ;) just to let you know.

I think the number that is current is 1 in 133 people have celiac if I remember correctly (I could be wrong)
