Under ADA rules and regulations, you have the right to certain accommodations covered under the EEOC. You don't even have to write it out formally (But I would). Once mentioned, it is your employers duty to see that accommodations are met (as long as they are considered reasonable). Look up the JAN (Job Accommodations Network) for tons of information, plus a sample letter you can send to your HR director.
My mother has suffered with Chrons since she was 24, and is now 84...So I can at least sympathize with the horribleness of this disease.

Your work should know and should not fire you because of your condition which is illegal. Also, consider getting a more stress-free job (different field). And try yoga daily.
Finding things that make you happy will definitely help. If you are stressed out, sing a song, have some coffee, whatever it is to help you relax.
Now, this is a condition that is hard in the work environment. I was actually fired twice for it even though it's completel ILLEGAL to do so.
But you need to tell them. OR, you can be assessed by a doctor and provide your boss with a doctor note stating that during flares you need to be on light duties or something.
