Occlusal interference is the most common culprit of bite shift. If there is no ear pathology identified by ENT, ear problem is one of the common presentations of temporomandibular disorder. Seeing an ENT and tmj specialist is advised.

Also, sorry for the typo, but it is a constant headache I have, not earache.
Onset of headache at age of 62, which is attributed to tmd, is extremely rare. I would suspect intracranial pathology. Seeing a neurologist is advised.
