Not eating after taking your insulin

Sometimes when I check my glucose before dinner it will be over 200. Am I in any danger if I take my nightime dosage and skip dinner. I take 30 units of Novalog mix 70/30 in the morning and 25 units at night. I can't seem to get a regular meal pattern, so how close together can i safely take my shots. I am close to getting my levels to an acceptable level, but I am still getting some readings in the low 200's. My most recent A1c was 6.7 down from 10.1 and I have lost 19 lbs. in 3 months.

I failed to mention that I have HepC and cirrhosis so my liver function is not normal. I eat when I'm hungry. I have 2 meals daily that have between 45 & 75 grams of carbs and a couple of snacks with around 15 - 20 grams between meals. I don't really have a meal schedule. I've never had one. I've only been on insulin about 4 months and was diagnosed with type2 last August so I'm still learning.

What kinda schedule do you have?  How long are you going between meals and such?  What is your carb intake and such?  You should be consuming a minimum of 45grams of carbs at every meal and more for that kind of insulin regime and you should be eating atleast every 5 hours if not splitting up your meals into 6 small meals a day.  Sounds like (and I am no doctor - just another Type II diabetic)  that your ping ponging.  Your sugar is getting low and you aren't noticing it and then your liver is actually making sugar cause it isn't used to the "lower" levels (and by that I mean somewhere in the 130s to 140s even though that is not considered "normal") and it is kicking out sugar which is causing your readings to go high.  Your A1c indicates adequate to good control!  The weight loss is great but realize that it is a shock to your body to have those pounds off and it has to "relearn" how to do everything.  
When was your last visit to the endo or the PCM?
