I like Cauliflower Mashed "Potatoes".
Boil a head of cauliflower broken into florets.
When thoroughly softened, drain and mash down. Add some butter salt, sour cream or milk, and two tablespoons of instant potato flakes for a thickener.
Now beat the heck out of it until creamy.
The low carb results are so close to the real thing, that you'll never miss potatoes again. Much better for you too!
