Protein linited diet - what about vegetables?

As discussed in other posts, our Westie is suspected to have allergies to some protein so his diet is restricted to an aforementioned Hills Prescription Z/D diet... he liked the kibble to start and really liked the canned version. That has all passed over the three weeks or so he has been on this diet.  The diet has a modified chicken protein - I forget what the vet said exactly but she explained it a form of protein in which the protein molecule chain has been broken making the died close to protein free as far as allergies are concerned.

He is also being treated for Yeast problems (may be related to an allergy) and is taking Ketoconozole tables and a prescription antihistamine.  I am not able to force either of these down his throat.  I had used the canned food to stick pieces of the pill in and even to stuff the antihistamine capsule in.  Now I am forces to try different versions of wet kibble, wet only with water.  I have tried using hot water even running the kibble/pill/wate through a few seconds in the microwave.  I have had some success with this.

Today I left a question with the front desk at my vet's office and asked if I could use some baked potato to encourage him to eat his medication.  It occurs to me white rice, most vegetables as long as the vegetable is just that, no salt, butter, spices... just the vegetable that has been cooked.  I did offer my question in the form that the potato is just one suggestion that came to my mind, I know he likes potato and rice. .

Yes, another tyhpo, linited should have been limited.

I got a call back from our vet's office last night.  She said it was okay for me to feed our Westie a little baked potato - with nothing on it, just the potato.

Our little guy likes potato and it is helping me get yeast fighting medication in his tummy... and he enjoys the potato so much when the teaspoon full is eaten he keeps going and finishes the kibble lying underneath.
