Southern cooking has never been accused of being 'health food'. Meatloaf: 2# lean HB meat, 2 eggs, 1 diced green bell pepper, 1 diced onion, 1 1/2 stalks of crushed saltine crackers, 1 can tomato soup, 1tsp salt, 1/2 tsp pepper, shake in some worcestershire sauce. Mix together well by hand & then form a loaf. Spread a little ketchup across the top. Cover in foil. Place loaf in oven at 350*. Bake for 90 min. Take off foil & let bake for another 12-15 min. Should be ready to eat.
