Cracker Barrel (southern style) meatloaf

Southern cooking has never been accused of being 'health food'. Meatloaf: 2# lean HB meat, 2 eggs, 1 diced green bell pepper, 1 diced onion, 1 1/2 stalks of crushed saltine crackers, 1 can tomato soup, 1tsp salt, 1/2 tsp pepper, shake in some worcestershire sauce. Mix together well by hand & then form a loaf. Spread a little ketchup across the top. Cover in foil. Place loaf in oven at 350*. Bake for 90 min. Take off foil & let bake for another 12-15 min. Should be ready to eat.

whooo hooo. do you know we always used to be here Pip has some wonderful recipes..I am always after meat loaf recipes. it was new to me from UK and I love it..I usually make 2-3 and freeze them ..this one will be made in UK when I am on vacation in UK in Sept  ....

Your meatloaf looks like it'll be wonderful, sliced fairly thin, and eaten as a much healthier alternative to prepared lunch meats.  I'm seeing a couple slices of my wife's sourdough rye, some roasted sweet red peppers, this meatloaf, a heavy sprinkle of freshly grated Asiago...throw it under the broiler for a moment to toast the cheese...
