I've been on same kind of diet.........it lower my cholesterol, that is about all it did for me.

I had real problems with feeling tired and falling feeling like someone had taken out my batteries around mid-day, a couple of hours after eating. But usually found I perked up again late evening and could stay up late without realising it. Then another day would start. I would wake up feeling like I had been in a boxing ring. My head/body/feet would hurt etc etc.
The only thing that has really helped me was a change in diet. I saw a nutricianist who also is diagnosed with Fibromyalgia. She recommends removing all simple carbs from the diet ie. sugar, wheat, white rice, potatoes etc (and dried fruits to begin with). You can eat other complex carbs eg. oats, rye, quinoa, millet etc etc. (I did find out I have a gluten intolerance, which may/may not be relevant to you and I also have a dairy intolerance, but usually that is not the case). Anyway, having removed these simple carbs you have to eat a balanced snack every 2-2.5 hours. So this might be a rivita ryebread with a piece of ham and salad; then 2 hours later some seeds to snack on eg. pumpkin/sunflower seeds/nuts etc. Eat plenty of protein, complex carbs, vegetables/fruits/salads etc. You must eat something last thing at night within an hour of going to bed and must eat something within 30 mins of waking up.
I am no longer falling asleep and the muscle pain is starting to lessen. I knew I was making progress when I could actually do something like wash the dishes or do some ironing in the afternoon/evening. She also recommended some vitamin supplements such as Spiralina (supergrass), vit B complex and Ester C. Lots of herbal teas (esp. nettle and detox teas).
Once you get into the habit it is much easier than it sounds. Also the brain fog has lifted.
The doctor also prescribed Amitriptalyene, which has stopped me waking up 4/5 times a night needing the loo and has taken the edge of the continuous low mood.
