faciial flushing , headache , mental fogginess

am 21 years old , i usually suffer from post meals headache for one hour duration associated with mental fogginess and anxiety loss of sleep , sleep disturbance , i suffer from it for one years now , no hive dermatitis or abdominal pain , some time i have constipation and some time loose motion , i get irritated after eating heavy meal to extent that i cant perform my daily life activities , i eliminated gluten from my diet for 4 days i felt completely great , but am not convinced i have gluten sensitivity cuz in my childhood i was eating every thing there were no problem , and cuz i have no autoimmune, family history or diarrhea ,anemia associated with it ,  when i take dairy products like milk cheese  i get the same symptoms of flushing  ,, what i really fealis reaction to the meal i have taken that take place in my central nervous system mainly ,, although there are alot of gas and bloating  but no GERD , i eliminated gluten for 4 days and felt happy and reduction of mental problems but thence i took heavy meal that contains mainly  rice with no source of gluten i got the same manifestations , so i started duobting that the cause is gluten so i returned to my usual habbits ,, now i suffer from the symptoms and i dont know what to do , i performed complete blood check , every thing was normal but didnt perform test for celiac ,, so i dont know what is the cause , and if the cause is  a specific substance , ow can i know it and what to eliminate and what to eat !!!!!!!! :(

Most soy sauce is made with wheat, so if you put even a drop of soy sauce on your rice, you got gluten.

If I were you I would get a blood test for Celiac disease.  Even if you are negative for that you could still have a gluten sensitivity, but you really want to find out if you have Celiac disease.  It causes symptoms such as you describe.  Besides gluten I can't eat nuts and I don't drink milk, but after being gluten free for 5 years I seem to be able to eat some GF ice cream now and then without any problem.
