Bakery's don't usually have gluten-free stuff at least in the U.S., but there are a lot of companies that do make gluten-free products like breads and cookies. You can also buy some very good flour to make bakery goods for yourself. I'm not sure about New Zealand, so look around.
Most foods can be made without gluten or dairy. I routinely substitute soy milk for dairy in my husband's diet and we make a lot of things from 'scratch.' It takes a bit more time during the week, but he feels so much better than he used to. It's a small price to pay. There are loads of sites on the web that can give you wonderful advice on gluten-free and dairy-free foods.

It's possible that you could be intolerant to both gluten and the casein in the dairy - many people are. With the casein - a major protein - it's often a cross-reaction to being gluten intolerant. And you don't have to have diarrhea as the resultant problem with gluten. Many people also get consitpated.
If you feel better being off gluten and dairy, do so. If the doc did blood tests and they come back normal, ignore the test results and go gluten and diary-free. You'll feel better. The tests aren't always accurate.
In addition, gluten problem can also cause pain, rashes, tingling in hands and feet, 'brain fog' and a heck of a lot of other long-term problems.
Make sure you check labels on anything you eat that is pre-prepared. It's not worth being 'hit' with gluten. It can make a person's life miserable if they are intolerant.
