here is the recipe I found and changed around. I do that a lot. I always change recipes around according to what I have in my pantry or if I don't like something in it..
Ingredients
2 cups fat-free, less-sodium vegetable broth (such as Swanson Certified Organic) 1 cup water 1/2 teaspoon salt, divided 1 1/2 cups uncooked quinoa, rinsed 3 tablespoons chopped fresh flat-leaf parsley 1 tablespoon olive oil, divided 1/4 teaspoon freshly ground black pepper, divided 3 cups thinly sliced leek (about 2 large) 4 cups thinly sliced shiitake mushroom caps (about 8 ounces) 1 1/2 cups chopped red bell pepper 1/4 cup dry white wine 1/2 cup coarsely chopped walnuts
Preparation
Combine broth, water, and 1/4 teaspoon salt in a large saucepan; bring to a boil. Stir in quinoa. Cover, reduce heat, and simmer 15 minutes or until liquid is absorbed. Stir in 3 tablespoons parsley, 1 1/2 teaspoons oil, and 1/8 teaspoon black pepper. Remove from heat; keep warm.
Heat remaining 1 1/2 teaspoons oil in a medium nonstick skillet over medium-high heat. Add leek; sauté 6 minutes or until wilted. Add mushroom caps, bell pepper, and wine; cook 2 minutes or until vegetables are tender. Stir in remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper. Place 1 cup quinoa in each of 4 shallow bowls; top each with 1 1/4 cups vegetable mixture and 2 tablespoons walnuts.
as far as cooking quinua in a rice cooker.. not sure..
oh that sounds awesome with the eggplant and mushrooms, you will have to post your recipe so I can try a variation of it, I never thought of that!
I always wondered if you could cook quinoa in a rice maker...
oh you know what else I like actually,, Imitation Crab Meat.. and I will have to try your way of Quinua. I have the black with mushrooms, leaks, eggplant, and other stuff if 'i decide lol. but those mostly
You know what I love quinoa and I need to make some because I recently bought some more of it because it is a pure protein.
I cook mine in vegetable stock. I love the red quinoa best. I saute onions and garlic and then I add it to the mix. I use some parmesan cheese added in there to and nutritional yeast. Now you are so making me hungry!!
Today I am craving salmon patties.
I have been drinking Ensure, making protein shakes, eggs, beans, not huge on cheese but I eat some it some.. Oh and I have been drinking milk every day.... you ever make quinua? really good.... it gets hard at times though.. I try to eat chicken if we go out or steak.. but only if some one else cooks it lol...
Yeah I am not so good at preparing meat because of the looks and smells but apparently I have no trouble eating it these days. Argh miss my vegetarianism though I must confess. What are you eating for your protein mostly? That's what I am always trying to make sure I have enough of.
oh actually.. can't eat meat really but it is because of the smells. I want sweets sometimes but only once in a while but I think it is only when my sugar gets low.. Fruits and veggies I love the most.. :)
Congrats! I just found out too that we're having a boy. The due date is Oct 15. I can't wait to start shopping for my little prince.

Oh Congratulations!!!!! I love little boys they are so fun. I have two already and it will not surprise me at all if this one is a boy too. I go for my big scan on the 8th. I don't want to know the sex though. I always like for it to be a surprise. I forget if you told us or not, were you craving meat or sweets?
