Your symptoms in this are irrelevant, for a start they have lasted too long and ssecondly if your symptoms were due to HIV then you would have tested positive or in the least indeterminate on your tests.
The HIV test does not look for HIV itself it looks for the antibodies that are produced. The ARS is caused by the production of antibodies not by the illness itself which is why if your symptoms were ARS then your tests would be showing antibodies.
Yes, you had a risk but it was a low one. Female to male tranmission, especially on a one time encounter is very low risk. You have tested out to 54 days which are pretty reliable. The very very vast majority of people will have detectable antibodies (with any generation of test) by 6 weeks.
You do need to re-test at 3 months to be conclusive but I very much expect you to continue to test negative.
I don't know about lebanon but everybody here in Oman is sick with all the symptoms you have as well, we are all putting it down to climate change. I think you should do the same as I really don't think you need to be worried about HIV but you do need that confirmatory test at 3 months.

Do not waste your time on symptoms, they are often misleading and do not mean much. The more you think about them, more your find them, and many ARS like symptoms can be due to many other reasons, so just ignore them and believe your test report

No, you are not at a high risk. Not everyone gets HIV from s single act of unprotected sex with an HIV partner. There are many odds in your favor. The most prominent one is your 7+ week test which is highly reassuring and it is very highly unlikely that this test result would change after 5-6 weeks.
Get a follow up test done after 12-13 weeks and get a conclusive report and move on with your life, after putting all your worries to rest permanently.
Next time, keep alcohol and a woman separate, they do not mix well.
