Lack of Taste (Flavor) - Multiple Years

My son can't "taste" flavor, and texture has become the only thing he cares about in food, this means that things like vegetables and other such things are unbearable to him due to their awkward textures (generally resulting in immediate vomiting upon attempt to eat them) and that most times he's out with friends he can't really enjoy food all that much apart from occasionally due to a focus of texture. He's demonstrated mildly to me what it's like to not have a sense of flavor by closing my nose before I eat and then releasing it throughout the action of eating any food so as to see the difference with flavor and no flavor, but he seems to have an oversensitivity (though perhaps not) to texture because of the lack of the other sense, which is different then what I detected.

Most people think it will pass but this has been going on for years and no one's had any ideas apart from vitamins that don't seem to work.

I'm also afraid that it's leading to a lack of his desire to eat (he can go multiple days without eating, same with sleep) or to go to places where food is a primary focus; possibly to depression as well.

All doctors have recommended are vitamins, or it going away and it hasn't. We don't have the insurance for non vital doctors appointments that don't turn up anything.

You need to find out if it's a medical problem.  Most people who can't taste have a problem with their nasal area, since that's where the sensation of taste comes from.  If there's no medical problem, it's psychosomatic.
