In search for the perfect salad...

I am always looking for the perfect salad and thought for a change of pace we could find it together.
I had a wonderful salad to today.
It is called "Perfect harvest" made by Dole.
Romaine,endive and radicchio and shredded carrots with dried cranberries and diced almonds with an apple cider dijon vinaigrette!
It is really awesome try it:)
Got it at Winn Dixie
I usually make my own salads and dressings but seen this and tried it and it was great.
What is your idea for the perfect salad?

I used to have a huge garden about the size of two football fields when I lived in Alabama and I loved having all the fresh veggies and my freezer stocked for the winter. I was lucky in I have to work the garden though. My Father in law did that I helped plant and he tended to it and brought the veggies to me and my Mom in law and we out them up and cooked them. I do not miss Alabama but I miss that.
I am going to try all these recipes they sound so awesome.
I love okra and tomatoes. that was the first thing I cooked when my tomatoes were done.
I also used to cook tomato gray and rice with bacon grease of course:) with sausage and bacon and homemade biscuits for breakfast. Oh I wish I had some.
It is no good with canned tomatoes. I always used my homemade canned tomatoes.

You make gravy with bacon grease and flour and instead of water use the tomatoes and then add water as needed. Put over rice or homemade biscuits and add your bacon/sausage and it is so good!. Oh and don't forget the cane syrup.

Gemini you are so right about gardens .It is wonderful having all those fresh veggies right out your front door .I love the part you wrote about going out to the garden with a salt shaker .I have eaten corn on the cob right out of the garden too .It is delish .And the tomatoes warm from the sun with the juice dripping down your chin is awesome .My hubby thinks I am crazy sitting out in the garden chowing down but he is the one missing out .LOL!! Sara I am going to try that okra recipe .I love okra and that sounds so good .I love the idea of sharing recipes . I will put some more up too .I am off to can more tomatoes now that hubby is home .Tomorrow I am taking a bunch to our local food bank .I want to share them with people who may not be able to have a garden .

Speaking of bacon grease, well, this isn't a salad but delicious.
Chopped Okra - fresh or frozen equal to 1 16 oz frozen bag
Chopped seeded tomatoes - canned or fresh equal to large can of canned
1 Chopped yellow or white onion
Saute onion in about 1 TBS of bacon grease.  Add tomatoes and okra.  I use a little sugar (1 teaspoon) , ground cumin, salt and pepper to taste.

Cook about an hour.

Even my kids love this one.

When I lived in central PA I also had a HUGE garden and would can and freeze all the fresh veggies so that we could enjoy them throughout the winter.  I also made lots of fresh salsa, different kinds of pickles, spaghetti sauce, italian zucchini, apple butter (we also had a lot of fruit trees on the property) and even gave making homemade ketchup a try one year - although the process was so long and tedious that I don't think I'll ever do that again - it also didn't yield very much so I felt as if I was almost "wasting" those nice fresh tomatoes.

My zucchini always went totally haywire and I would end up with WAY more than I could ever think about eating, freezing, canning, giving away, etc.  I started grating it and packaging it in the appropriate amount to make zucchini bread and then freezing it - be sure you wring ALL the moisture out of it before you freeze it though or you'll just end up with mush.  It made for a very nice treat in the winter time to be able to have 'almost" fresh zucchini bread.

We also usually planted at least a couple of watermelon and pumpkin plants - the watermelon never really did all that well - they tasted good, but were only the size of a very small canteloupe.  My grandmother used to make pickled pumpkin that I absolutely LOVED as a kid and somehow, my dad was able to remember most of the recipe so I also made a bunch of that a couple of years - definitely brought back great childhood memories of spending time with my grandparents.

I really miss having that garden and also having access to the other bounties available when living in the country - we had apple trees, peach trees, cherry trees, pear trees, wild raspberry bushes.  There's nothing better than being able to walk out your front or back door, walk to the garden (or fruit trees/bushes) and pick something 100% fresh for dinner.  The corn and tomatoes were so wonderfully sweet that I was known to go to the garden with a salt shaker and sit there and eat corn and tomatoes right there (yup - raw corn on the cob - delicious when fresh)

To everyone - I also would LOVE to have a recipe swap - I love to experiment in the kitchen, so some of my "recipes" are simply things that I've concocted (most of the time they are quite edible!), but between me and my mom, I know we have a TON of "real" recipes!

Hi ! My husband and I are organic gardeners and I have a remedy that may help you .Handpick adult bugs off .Lay boards around plants check under them daily and destroy hiding squash bugs .Spray severe infestations with Rotenone to control nymphs ,with Sabadilla to control adults .In the future plant tolerant cultivars and cover plants with a floating row cover until female flowers open .You should be able to find these sprays at any garden center .They are OK to use for organic gardens. I hope this was of some help to you .

btw for all you gardeners out there- Im very frustrated this year, almost ALL my squash plants got killed from squash bugs! I have no zucchini, yellow crookneck, spaghetti squash, no acorn squash, no butternut etc!!  How do you deal w/ the squash bugs without having to use toxic chemicals. I hate to put pesticides on anything (i have in the past but dont want to make regular practice of it) are there any natural remedies that scare them off??

ok I dug out my broccoli slaw recipe

Broccoli Slaw

1 cup Miracle Whip
1/2 cup sugar
1 TBS vinegar
6 slices fried bacon/cooled/broken/crumbled
1 TBS bacon grease
Chopped fresh Broccoli, shredded carrots & cabbage (green or red), cauliflower, red onion.

you can omit/add/ change veggies as desired, as I stated before there are no rules in recipes like this. I often add bell peppers in this recipe too and whatever I have on hand.

LOL!! Some of my northern friends think I am crazy for using bacon grease .They don't know what they are missing .I would love to see your recipe for broccoli slaw .We love broccoli and I am always looking for new ways to fix it .We have had a garden big enough to feed a third world country this year so I have oodles of veggies .We are canning tomatoes now (250 quarts so far ) and I have a freezer full of sweet corn and broccoli and I have onions ,potatoes, and such still in the garden so I am looking for new ways to use my veggies .Salads are awesome in the summer .Ya'll keep the recipes coming .I love it !

All the salad recipes sound delish .I am like Sara tho a southern cook so I save my bacon grease ; ) .I have a recipe for wilted lettuce salad .This is a mainstay for us in the summer .You cook 6-7 strips of bacon .Save your grease .Take fresh lettuce ,tear for a salad .thinly slice an onion and put in .Crumble the bacon you cooked into the salad .Then take 1 tbsp of hot bacon grease and pour over the top .Toss and voila wilted lettuce salad .I sometimes put just a touch of rice vinegar or apple cider vinegar in with the bacon grease .This salad is awesome .My husband simply adores it .I hope ya'll try it .It is really good

Wow troubleinohio, those sound too delicious! Thanks for the recipes! I always use the little red potatoes too and leave the skin on that's the best part.
I would love to have a place we can trade recipes too. I think with us the fast and simple ones would be great as then we don't have to go to another pain level to cook dinner:)

Sara, most grocers have these salads they are bagged salads and are made by Dole. They are in the produce section. Their Cesar BLT is awesome too.

OOH!  I'd love a recipe thread.  I'm always looking for something new.  Unfortunately, I'm a Southern cook.  (Shame on you Yankees throwing out bacon grease-LOL Wink Wink!)  I've learned to adapt my recipes to olive oil and lower fat methods.  

Sandee:  I've go to find that salad.  Winn Dixie was sold to Brookshires here in Texas.  Maybe they'll have it.  If not, they're good about ordering things.

we should start a whole recipe thread and share! I have tons of recipes I would gladly share. I love getting new ones to try from others as well. LEt me know if you guys want to do this. I make pretty much anything and have recipes for lasagna, casseroles of many types, cream of potato soup (one of my top specialties), homemade mac and Cheese,  seafood and chicken enchiladas (another top speciality of mine), cookies, cakes, desserts, goulash, spaghettis, salsa, soups- you name it LOL

omg I cant find my recipe!! i was going to type it up and I've lost it. I had all the calculations on it too so it could be made 1.5x more or doubled, etc. I have to find it!! lol

in the meantime here's another one I call

End Of Summer Salad:

Fresh COttage cheese
chopped bell pepeprs, cucmumbers, tomatoes red onions. (add whatever extra other veggies you like too, there's no rules!)
Take salad a small amount of salad dressing of your choice (I use ranch peppercorn) and mix in with the cottage cheese (one whole container) and add dill weed, sugar, garlic, lawry's salt, course ground black pepper and a dash of cajun or horseradish if you want a small kick to it.

ps on the potato salad: I leave the skins ON! when you use this type of potato, the skin isnt rough/leathery and still edible (and good for you) and makes it more colorful too. I quarter them before cooking til nearly tender but not too mushy or you'll have mashed potato salad instead lol

I make tons of salads this time of year too! I do the basic mixed veggie salad, then I also do speciality salads Potato Salad is the one i make best. I use red skinned baby taters, Real HELLMANS, 3 garlic cloves (not dried/canned/jarred--only fresh) and mince them small, 1 lrge onion diced, a small squirt of mustard, several squirts of peppercorn ranch dressing, seasoning salt (i use Janes Mixed up Salt, but Lawry's is good too), fresh sprigs of chopped parsley mixed in (and on top as garnish) (cilantro is good in it too).

funny as i was typing that up, my neighbor lady just came over and asked me for this very recipe because i made it when she was over on the 4th of July weekend and she loved it. I was honroed that she wanted any recipe from me because she is super cook, way better than me!

anyhow, I also make pasta salads and fruit salads, and cucumber salad

Creamy Dill Cucumber Salad:
2-3 Med Cukes (or thinnly sliced zuchini)
3/4 cup sour cream
1 tsp sugar
1/2 tsp salt
1 tsp dill
1 garlic clove; minced

THats it...its fast, easy and delicious. Ive made it at least 20 times this summer, lol. ITs also good over fresh cut tomatoes too.

The salad is one of those in the bag sold by Dole so you should be able to get it at your grocer. Yummy, the pasta salad sounds so yummy!

OMG!!  My mouth is watering right now!!!  That salad sounds sooooo good!  I'm going to the grocery store tomorrow (we don't have winn Dixie around here though), so will definitely look for it.

I usually make my own salads also - sometimes the dressings too, but not always on those (but I do prefer my own over bottled).  I usually tend to make salads out of whatever I may have available and not go by any particular "typical" salad type.  One of my favorites to make is strictly made up of miscellaneous fresh veggies - green beans, broccoli, carrots, mushrooms - basically whatever you like and have on hand - I usually them just make a very simple vinaigrette for it (I also dijon in my dressings most of the time, but have never thought to use apple cider or apple cider vinegar - usually it's red wine vinegar)  I absolutely LOVE this time of year for the availability of fresh veggies.  I also make an awesome (if I do say so myself!) pasta salad that usually ends up being way more veggies than pasta!!  Again, it's usually never quite the same salad twice because I go with whatever I happen to have or whatever looks good that day at the store/farmer's market.
