Fruits, vegetables, lentils, nuts, legumes, organic eggs. Gazpacho is amazing. Eat colorful and as close to the way it grows as possible.
Sandwiches are delicious and healthy, just no cold meats. I make bacon, grilled chicken or steak with the regular lettuce & tomato but to mix it up I switch up my cheese choice and add avocado, spinach, cucumber or jalapeño depends what you like though :)

Veggies with some salad dressing is a nice snack. The dressing actually helps you absorb fat soluble nutrients in the veggies. A baked potato with some chili or cheese and sour cream is yummy. And the toppings on the potato also help absorb those nutrients. I like quesadillas with cheese and refried beans and chicken or beef if I have some on hand. Grilled cheese with tomato slices grilled inside is delicious, especially with some tomato soup. Oh, I'm making myself hungry! I think I'll make soup and sandwiches for dinner tonight. :)
