That's almost exactly how i make mine the parmesan cheese really gives it a yummy kick!!. Well it's how my DF makes it LOL he is the chef...The only difference is that i spread toasted crushed townhouse crackers over the top.... hmmm sounds really good

joy my husband enjoys mac n cheese also! and so do i and the girls. like Joy said by the whole grain elbows, then i dont know if this is any healthier but heres how i make it:
melt butter in a pan, then add about a tablespoon flour, mix it really well till its very pasty (like you are making gravy) then add about a cup and a half of milk and mix until fairly thick then add shredded chedder cheese (about 2 cups) then stir until cheese is completly melted. add more cheese if you want it cheesier, add pepper. poor over cooked pasta, top with more shredded cheese and parmesan if you like it then bake for about 15 minutes. really good! sorry so long i just really like recipes!
Im not even a big fan of mac and cheese but now I really want some, LOL.. Sounds really good!!
i agree with Joy, all i use now is whole grain pasta for everything. but even rachael ray has a recipe that she adds chciken and spinach to make it very healthy cause you get lots of vitamins and protein in it:) Cheese is good cause the calcium. Yum now i want to make home made mac and cheese
mac and cheese is one of my favorite meals just by you mentioning it has got me going i need to get some mac and cheese now lol

Okay my husband eats macaroni like there's no tomorrow! First, use whole wheat pasta with lots of fiber. Boil the pasta to desired tenderness. Melt desired cheeses in microwave (I'm not sure which are the healthiest, but low-moisture mozzarella is one but tastes icky by itself... so mix cheeses!). Add about 1/4 cup of milk and melted cheese to the noodles.
You can also add cooked broccoli or spinach to the mac-n-cheese (you won't taste it unless you add a TON) so you get some greens too.
