It's THAT time of the year when everyone is sick. You have no reason to suspect that what is going on is std related and there is absolutely no reason for std testing from just kissing someone.  Yes you can get hsv1 orally from kissing. that isn't a std. Most of us have it by the time we make it to the old folks home anyways. It's incredibly common.  Canker sores are not oral herpes. oral herpes will not cause you to have a sore throat for a month either.

Viral illnesses can take 3 weeks or so to run their course.  At this point it's probably time for your provider to consider antibiotics in case it's not just a virus going on at this point. Sinusitis can cause post nasal drip which can cause sore throat.

Also got 2 canker sores in mouth, inner right cheek at outset of condition.

Saw Dr last week; diagnosed as upper respiratory infection and to return if condition persists. No culture or other tests were ran aside from identifying inflamed tonsils. Likely returning to see Dr again tomorrow.

A GIS said that it is possible to get HSV1 through kissing, and in rarer cases also chlamydia, gonorrhea, and hepatitis B.

Not a STD see a Dr.

To start we can not diagnosis you. Second kissing does not transmit STD's, 3rd if you have had this pain for 27 days why have you not seen a Dr?
