Why was she told surgery is not an option for, at least, 12 months? Severe hyperthyroidism is dangerous and can lead to thyroid storm, which is life threatening... There should be no reason to put a time limit on surgery. It would seem that your wife needs new doctors.
Without knowing what her actual levels are, there's really little we can tell you, because if she's taking the methimazole, as directed, it should be bringing her levels back to normal. It is possible that she needs a higher dose, but that would be dependent upon her actual thyroid hormone levels.
What "tablets" is your wife on and what dosage?

What are your wife's actual thyroid hormone levels? If you have those, please post them, along with reference ranges, which vary from lab to lab and have to come from her own report.
Graves disease usually require surgery to remove the thyroid gland and put on full levothyroxine replacement treatment. So if its not temporary and staying like this for long then need to consider surgery as hyperthyroidism is particularly harmful to heart.

Yes hyperthyroidism can make one go insane. If checked her blood pressure it will be very high. She find it difficult to sleep, relax and hard to cope anger. So all this frustration she express it to others especially to ones she love most. So ignore her anger she showing at you and instead make her to see the doctor and start treatment.
