GI problem? Allergies?

I have been experiencing issues with my health on and off over several years now.  First I started having gastro issues in 2015.  I had bleeding when making a bowel movement, swollen stomach, constipation and then times where I would have bowel movements 5+ times per day.  I was checked for parasites and had blood work done and nothing came back.  In 2016 I started to have pain in my sinuses and swelling in my lymph nodes behind my ears.  While I was experiences this I was having gastro issues simultaneously.  I had to go to the bathroom 4-5 times a day and within 30 minutes of eating.  I gained weight and even though I was at the gym 3-5 times a week was unable to do anything about it. I had pain in my joints, mostly in my wrists and fingers, also in my ribs.  I got tested for parasites, Lyme disease, etc and nothing came back positive. I went to an ENT doctor and they gave me a nasal spray and said my sinuses were inflamed.   Finally a doctor said I must just have gastro issues and they would need to clear up naturally.

This spring I switched my birth control. I started to feel better about a month after that and had regular bowel movements, lost about 5-8 pounds and had no sinus issues.  Recently my family and I got a virus that involved stomach cramping and diarrhea.  Since that time I have had blurred vision, pain in my sinuses under my eyes,  swelling of my lymph nodes behind my ears, a swollen stomach and had to use the bathroom within 30 minutes of eating. I am gaining weight and my joints are very sore (mostly wrists).  I am very sensitive to alcohol and find I have terrible allergies when drinking wine or spirits. I don’t know what I should do about this issue since I have gone to 5 different doctors and no one has helped me.  I have visited 3 different primary care doctors, an ear-nose-and throat doctor, and infectious disease doctor.  I would love some advice on who I should see next or ways I can naturally diagnose the issue myself.
