If I'm on say 2400 a day diet and I have calories left over can I carry them over to tomorrow.

No, one would not carry over calories. You're allowed so many/day and if not used, they're just gone.  For instance, suppose you only ate 1300 of your 2400 calorie budget today and if you carry over the extra 1100, that will mean you'd be eating 3500 calories tomorrow.  

To put that in perspective, one pound is equal to 3500 calories, so you'd be eating enough calories in one day to gain an entire pound.
