Too good not to share

I found this recipe in my weeekly makeover feature on Healthy Cooking. I threw in some chopped fresh basil and a handful of baby spinach.  It is so healthy and tastes like it isn't.  I served it with some sauteed garlic shrimp.  My husband loved it!

Dr. Oz’s Healthy Diet Fettuccine Alfredo Recipe by Dave Lieberman
Ingredients:

1/2 lb cooked whole wheat pasta

1/2 head cauliflower, cored removed and broken into small florets

2 tbsp olive oil

2 shallots, minced

1/2 cup chicken stock

1 cup grated parmesan cheese, plus more for garnish

Salt and black pepper to taste

Directions:

1.  Cook the cauliflower for 20 minutes until it is soft.

2.  Cook the shallots over medium heat until translucent (around 10 minutes).  Add the chicken stock and continue to cook for another few minutes.

3.  Once the shallots and cauliflower has cooled, pop it into your blender and puree until it is perfectly silky and smooth.  You don’t want any chunks, because this is your alfredo sauce!

4.  Toss the alfredo sauce over your whole wheat pasta and add the parmesan cheese.  Serve warm immediately… definitely a happy addition to my Weight Loss Tips!

As a main - 3 or 4 servings.  As a starch along with other vegetables and meat - 5 or 6 servings.

This sounds really good because I dearly love pasta; how many servings does it make?  My hubby eats no pasta/sauce except spaghetti w/meat sauce, so I'd have to eat it all myself.  I might be able to 1/2 or 1/4 the recipe?

I bet if I made this my hubby wouldn't even know. I already fooled him with half cauliflower half mashed potato. HE HE. I think I'm gonna give this one a try. I ended up eating the veggies off his plate lats night because he couldn't bring himself to do it. I'll get him to eat his veggies yet! You'll see.
