Hi - four years ago I underwent a total colectomy but after leaving hospital I ate normally - but in moderation.
Due to the increased number of toilet visits I found that a diet high in fibre (together with drinking ~2 litres of water during the day) made my motions more "muddy/sludgy". Over time this reduced the number of toilet visits and the "liquidity/corrosivness" of my motions. I suggest plenty of pulverised fruit and vegetables WITH BRAN mixed in. A mixture of oats + bran + grated fruit soaked in milk is also a helpful meal. Also you could try yoghurt with bran mixed in.
I guess that what I am saying is "choose your diet not only for convenience/personal taste - but also to modify the nature of your stools". If you have a fondness for good quality chocolate then don't give it up!!
