Inflammation in the body is strongly correlated to tissue acidity. Many people with autoimmune diseases benefit greatly from removing food allergens (again, casein, gluten & yeast are frequent triggers), and following the principles of an alkaline diet in order to decrease tissue acidity.
A vegan, alkaline diet contains large portions of deep leafy greens & brightly colored vegetables, and moderate amounts of fruits (melons are often favored), legumes, and whole grains like quinoa, buckwheat, bulgur, brown and wild rice. The ideal proportions are 70-80% vegetables, 20% grains, legumes, soy, nuts & seeds, and 5-10% fruits (in order to minimize yeast proliferation). Typically, the body receives most nutritional benefit when eating organic vegetables -- raw, juiced, or steamed lightly. People with leaky gut or digestive issues may initially be instructed to fully cook their food. We would like to emphasize that, when possible, it is always best to work with an integrative physician or nutritionist who specializes in reversing disease through nutritional and detoxification protocols.
To add robust flavor and healing power to meals, the ingredients of curry are additionally recommended for their potent anti-inflammatory properties. The most researched spices include:
Cinnamon. In addition to containing manganese, iron, fiber and calcium, cinnamon also has potent anti-bacterial, anti-clotting, and anti-cancer properties. What's more, just one-half teaspoon a day of cinnamon has been shown to reduce LDL cholesterol, alleviate arthritis pain, fight yeast infections and regulate blood sugar.
Ginger. Traditionally used to treat nausea, vomiting, motion sickness, headache, cold and flu, clinical studies have also found that ginger holds potent antioxidant, anti-inflammatory and anti-cancer properties. Patients with osteoarthritis often experience a significant reduction of swelling and pain with the regular consumption of ginger. Preliminary studies also indicate that ginger kills ovarian cancer cells and reduces tumor growth in colorectal cancer.
Cilantro. Known to be a natural heavy metal chelator, cilantro has been shown to bind to heavy metals like mercury and lead. It is also known for its potent anti-inflammatory, anti-bacterial, anti-viral and antioxidant properties.
Tumeric Possesses potent anti-bacterial, anti-inflammatory, antioxidant, and anti-cancer properties. Provides natural pain relief to people with arthritic conditions, and may prevent and slow the progression of MS and Alzheimer's disease. Is also used to detoxify the liver.
Cayenne Pepper. While many may have experienced cayenne's ability to clear congestion in the lungs and nasal passages, it may be surprising to learn that cayenne may also help to prevent stomach ulcers. A potent anti-bacterial, anti-inflammatory, and antioxidant rich in beta-carotene, cayenne pepper is used to boost immunity, improve cardiovascular health, reduce LDL cholesterol, and decrease pain associated with inflammation, including osteoarthritis and cluster headaches.
Garlic. High in manganese and also a good source of selenium and vitamins B6 and C, garlic has potent anti-oxidant, anti-inflammatory, anti-bacterial, and anti-viral properties. Traditionally used to strengthen the immune system and ward off illness, garlic has additionally been shown to strengthen the cardiovascular system, reduce LDL cholesterol, improve blood flow to the heart, reduce inflammation in rheumatoid and osteoarthritis, and prevent cancer.
Other foods used traditionally in Mediterranean cultures offer tremendous health benefits.
Parsley. High in vitamins K, C and A, as well as being a good source of folic acid, parsley is considered to be a "chemoprotective" food. A potent antioxidant, parsley helps to neutralize carcinogens associated with cigarette smoke and PAH's, prevent tumor formation in the lungs, promote cardiovascular health, and protect against rheumatoid arthritis. Tabouleh is a wonderful Mediterranean dish full of fresh parsley.
Oregano. Most commonly known for its powerful anti-bacterial properites and ability to strengthen the immune system, oregano is also anti-viral, anti-inflammatory, anti-fungal, and anti-parasitic.
Basil. A powerful anti-bacterial, oil of basil has been found to fight several pathogenic bacterial infections that have become resistant to antibiotic drugs, including Staphylococcus, Enterococcus and Pseudomonas. Basil additionally normalizes blood sugar levels, prevents insulin resistance, protects cellular structures from radiation, and promotes cardiovascular health.
