Peeks emergency curried hamburger helper

Apr 13, 2012 - 15 comments

I had ground beef simmering and was going to just make Hamburger Helper for dinner (poverty has reduced me that far).  So I open the cabinet and look for the HH.  Its not there.  Emergency in the Peek house.

Thinking quickly and moving with cat-like reflexes, I open a can of diced tomatoes, can of black beans, can of corn, and about 3/4 cup of leftover red rice.  In it all goes.  I also throw in what I believed to be curry powder, but in actuality, I had grabbed turmeric.  So it got about 1-1/2 tablespoons of turmeric.  Then I found the curry powder, and put another tablespoon or so of that in.  Finished off with some cayenne, and done.  Dinner saved.

Peeks delicious curried Hamburger Helper.

That's way better for you than that nasty hamburger helper anyway!  It sounds really good, actually.

That sounds yum. I remember the day when I put 3 tablespoons Chilli powder in a "curry" I was making (by mistake of course) DH loved it, (sweat pouring down his face) I could only eat about a cupful but it was good, so long as I could keep dunking my head in cold water, and a friend who joined us for dinner said (stoically) "this is good but could do with a little more salt"

Isn't Turmeric supposed to have anti-cancer properties? Or to protect against Alzheimers or something?

I ordered a huge container of turmeric, and I don't cook with it very much...just not familiar with it.   I was going through a phase at the time.

Will have to try it on eggs, I get those free from someone at church with chickens.

The guy who runs the Indian grocery story I go to says Tumeric is used to make dishes look like you've put more saffron in them than you have.  ;D  I'm sure you know saffron is INCREDIBLY expensive and bright yellow,  and if you make saffron rice you can put tumeric in it to make the saffron go farther.

I like the recipe.  Agree that it was probably much better than regular HH!  I'd not thought of putting tumeric OR currey powder in but am thinking this sounds tasty!  I have used tumeric instead of saffron may times Rockrose . . . much cheaper on this stay at home mom's budget who has a husband that loves paella!  Never thought of putting it on eggs.  Hm.  How about hard boiled eggs??  Got a few (dozen) of those left over from Easter. . .

It was a fast, hearty, tasty meal that will have me in leftover land for a while.  And cheap, too!

Vegetarians could altogether skip the hamburger.  And sauté some onions, too  maybe add another can of beans.
Usually I make my own beans from dried every couple of weeks, but I've gotten lazy.

I'm liking this idea more and more! This sounds like dinner in the next couple of days!

And the egg salad dish would definately be tasty!!  Good idea.  (need to start working on the stash of eggs before the house starts to smell like a rotten hen house.)

I found that turmeric goes on anything savoury, the eggs I do are scrambled or pan fried and the turmeric sprinkled on top ,dont know about cold eggs unless it was mixed with the Mayo, humm yes bet that would be good.when I fry fish I add it on top as you would salt and pepper, if I make chilli I add it with the other spices. one caution it stains ones fingers and you may go out looking like you smoke ....lol scrub after using
