I have Sjogrens and gut problems, IBS is common with Sjogrens. If you are a coeliac its likely you will have severe smelly diarrhoea and a problem keeping your weight on. If you do cut out wheat, rye and barley totally from your diet it would be safer totalk to a dietition to make sure your diet is balanced withoutthe nutrients that these foods normally supply. There is a blood test which would indicate if you are a coeliac, but you need to be still eating gluten when tested. I don't know what drugs you are on for Sjogrens but some of the ones normally prescribed can cause problems.

Well, I have Sjogrens, and while I test negative for Celiac, a nutritionist recommended that based on my symptoms, I should try a gluten-free diet. MIRACLE!!! I now have more energy, clearer thinking, and much fewer GI problems. It's been an absolute miracle for me. And, really, not that hard to do once you get adjusted.
