I got my laser coagulation done around 2 years ago. I wasn't given any specific instructions on anything post-op. However, I wanted to know if its okay for me to go on roller coaster rides? Is that safe?

Only your surgeon can answer that. If done for a retinal tear I tell my patients "NO".
