If you decide to be tested for HIV, I have a duo or "4th generation" blood test 4 weeks after the event. Such a test is 100% conclusive at that time.

Acute HIV infections do not cause symptoms a day later -- it takes at least a week and usually 10-20 days. In fact, your sore throat was even to quick for a common cold: whatever the virus you had, it was acquired at least 2-3 days before the sore throat started.
In addition, the rest of your symptoms are not typical for a new HIV infection, or for any other STD. I have no way of knowing whether all your symptoms are from the same viral infection that started with the sore throat, or if you now have a second problem. But either way, I'm sure it's not HIV or an STD, and that you didn't catch it from your partner. Further, you had protected sex, so you really were not at risk anyway -- and it is the rare escort (expensive female sex worker by appointment) who has HIV, so I doubt you were exposed.
You should continue to work with your personal doctor or clinic about your symptoms to figure out the cause and perhaps treatment. In addition, for reassurance purposes, you probably should have an HIV test -- not because I believe there is actualy some risk (I definitely do not) -- but because negative testing may be more reassuring than anything I can say. But in the meantime, don't worry so much. This isn't HIV.
