Pulse pressure after meals

If a person's blood pressure is 105/65 throughout the day but their systolic rises after meals for a couple of hours brining their blood pressure to 120/65 what can be causing this jump of pulse pressure from 40 to 55? this has been happening to me lately, but it was never the case in the past.

Your body makes continuous adjustments to you blood pressure throughout each day to accommodate the many physical actions, emotional states, and body processes that occur.  It is normal for your blood pressure to rise after meals.

Blood pressure is a fluid measure and can easily vary by 20% or so from one moment to the next.  That is why doctors always want a series of readings before deciding on a diagnosis or treatment regimen.

Both of the BP readings you posted are fine.  Feel free to ask questions to learn but please be careful about over-thinking things.  Worry about normal things will only hasten them toward becoming abnormal, IMO.
