It sounds like you've really recovered quickly from the delivery since you are up to traveling so long in the car and then going on carnival rides.   So I think you'll be fine.

Have you mentioned this to your baby's doctor?  Quickly reading through your profile it sounds like he was born a little early and he's just a week old.  Usually during this time pediatricians recommend quiet time at home,  no taking the baby out in public,  and asking any visitors who contact the baby to not be having symptoms of being sick,  and wash their hands before they interact with the baby.

Although it seems you'd be just fine I'm not sure this kind of travel would be recommended for your newborn.

At first I misread and thought you were pregnant and wanting to ride rides and I panicked saying "noooooooo!" My friend lost her baby because she rode roller coasters early on in the pregnancy :/. I'd say ask your doctor to be sure you're fine but if he/she wouldn't clear you to exercise I probably wouldn't go to crazy.

If you aren't pregnant anymore I don't see why not and if you aren't in any pain anymore :)

I wouldn't recommend it because of the jerking motions. Slow rides are okay.
