Rash, Itching, in winter

Needed advise, this happens to me, only in winter seasons, symptoms are:
i feel as if I am getting hot, although its freezing outside, then starts itching as if, some one is poking with needles, and when i scratch it, red rashes or spot appear on scratched areas, it also starts on itching on scalp, then the next few min are uncomfortable, I try to relax and the redness fade away and the itching also goes away,

up till now it seems normal problem, but the point of concern is, what triggers this condition., normally it happens in winter, when i get physically exhausted e.g. (run like  crazy for few min) or workout. But what I cant seem to understand is that, this happens also psychologically, for example, when I feel fear, our get caught lying, and other these type of uncomfortable feelings…

what is causing skin rash and itching by just feeling some emotions????
I did a little searching and read about this happing due to sudden temp change in body, this theory is understandable in physical work, but why its happening when i’am just uncomfortable emotionally???

And if it is like this… can some one please advise what to do to overcome this…

One more thing, I also have a celic (gluten free diet) problem

I get this a lot, I actually get a rash from ANY water, so sweat included. When I bathe, sweat, go to the beach - I get rashes all over sometimes.. To explain the winter part, maybe the dry air is causing it?
