Hehe, it's a little late in response but some suggestions for any late celebrators:
Orzo with spinach. Roasted fennel. Asparagus with a light sauce. Artichoke. Havarti with dill. Nori (dried seaweed used to make sushi). Spinach linguinie/fettucine noodles. Chives and scallions. Bok Choy. Leek soup. Honeydew! Zuccini 'n' squash. watermelon radish. alfalfa sprouts. Your favourite spices/herbs: Basil, Parsley, Oregano, Mint, etc.
Just to name a few. lol.
If you really wanna go natural on the green dye, just boil down some spinach in a little bit of water. Then pluck it out and sweat most of the water out. Just be careful, that stuff stains like mad. :p But great for dying w/out worrying about what makes up that "artificial" stuff in the ingredients section. o.o

When my kids were little, I used to scramble eggs with green food coloring.
OK .. is everybody a little shy or out celebrating???
How about cottage cheese with a little green food coloring and some green onions?
Or .. cucumber, green peppers, onions, a little vinegar, Splenda and celery seeds?
