What your mother is experiencing might be due to an apthous ulcer or just an effect of crooked teeth causing repeated trauma, or a simple vitamin b complex deficiency .I would suggest you consult an ENT specialist and get her evaluated and find the cause for the ulcer so it is easier to treat and rule out any infection causing the same.

Your mother’s symptoms seem related to geographical tongue only. Although it causes smooth, red colored patches on the tongue, It can cause discomfort, pain or burning sensation in some cases especially when eating hot, spicy, salty or acidic foods.
Geographic tongue is a benign condition that usually resolves itself without causing any problems for the patient so most people do not require treatment. There is no known cure. If there are associated medical conditions, treatment of these may improve the appearance of the tongue.
Discomfort may be treated with a mouth gargle or rinse containing antiseptic and anaesthetic agents. Topical corticosteroids may also be helpful for occasional use eg. triamcinolone in dental paste applied several times a day when required.
