I can't speak to the stroke effects, and you should discuss this with your doctor. But what I can do is ask you if you are testing your blood sugar? Sometimes our idea of "eating right" is not eating right as a diabetic. You can find several sources of suggestions for diet but testing two hours after a meal will tell you if the food you are eating is helping you stay in your target range for blood sugar.
