Here is an easy and very tasty eggplant recipe:
Slice eggplant in about 1/3 inch thick slices. Salt and leave to rest for 20 minutes. Rinse and pat dry. Fry the slices in a bit of olive oil until tender. In the mean time take yogurt cheese (made by taking plain cultured yogurt and letting it drain through cheese cloth or a coffee filter over night) and mix with a couple of minced garlic cloves. Put a dollop on top of each slice of eggplant. Top with toasted pine nuts.

So where are the recipes? I need more, more, more... I'm so tired of pre-made food! I need help with using spices and new foods. I can't believe how many I don't even know what they are! Funny looking things that I'm afraid of trying... I need a good eggplant recipe as well. I love the stuff, but am getting tired of just frying it then putting it in with tomato sauce and cheese like parmigiana style.

I am hungry. My husband made a hummus dip last night, but it is allll gone. He likes to try those "gormet" foods....watches "Hell's kitchen" & all sorts of other Chef shows. He isn't bad at cooking. He is going to a Brewer's game with our youngest daughter's boyfriend. They will have brats, chips, etc.
I am going to make a salad, I think. What receipes would you like to share?
