I doubt you would experience the symptoms ianvit describes those are mostly symptoms of advanced liver disease like difficulty sleeping that would be hepatic encepalopathy which is a symptom of decompensated cirrhosis and you are no where near that.
The symptoms listed by hrsepwrguy are most accurate. But just because it is on that list does not mean you will experience all of them.
The good news is that about 15 to 25% of people infected with hep c are able to beat the virus without treatment. But even if you are not in that fortunate group at least hep c is curable today for most people.
Has your husband looked into getting treated for his hep c? Today’s new medicines are much easier to take (no shots), better tolerated by most patients and have cure rates about 98%. Treatment could be as simple as one pill a day for 8 or 12 weeks and he could be cured.

I don't remember having any symptoms myself but that was many many years ago and I have been cured for a few years now, I just wanted you to see that it does happen and to let you know that I think you doc is taking the best course of action considering the situation.
