simple recipe

Hi, I just wanted to post a simple recipe I made that seemed to last a few days and felt good.
Brown Rice, steam or bake rice, drain tofu on paper towels to remove most of the water cut into 1/2" x 3"  in size peices, and place in a fry pan w/ HOT coconut oil (just enough to wet the pan) let the tofu sizzle, for a few minutes, then turn, do not keep turning,
add a sm. amount of Braggs Liquid Amino for seasoning turn one more time, then remove from pan
1st meal brown rice/ veges/ tofu
2nd meal chop tofu and sautee everything  in a little butter
breakfast > chop veges and sautee a little more in butter, add a scrambled egg to middle of hot vege/tofu/rice saute, then mix together,,,,, for fried rice breakfast.

Mary, what you described about the slaughter is why we split a local grass fed cow with a friend and get a pig from the local 4H at the county fair.  I have chickens for my eggs.  All hormone, antibiotic and pesticide free.  I also make my own sauce from tomatoes out of my garden plus canning and freezing lots of other veggies.

I started as a vegetarian for social political reasons and especially seeing how the cattle/chickens/ fish are treated before and during slaughter.  Its pretty horrific.  I actually did some commercial fishing and have seen fisherman shoot porpoise to keep them from scaring the schools of fish which is an idiot belief, cows that were so sick, they had to drag them to the slaughter.
I had a macrobiotic spaghetti sauce made from carrot and beet, it was delicious.  I hope to have the time to dabble in cooking again, and make fresh food from scratch....
thanks for the quinoa info I'm going to try one of those recipes.

I cut down on meat in later life, especially red meat, but still enjoyed it from time to time - a juicy hamburger, a grilled steak - the likes. But after tx, the sight of a blob of meat on a plate gags me - literally - with the exception of fish but even then there are days I have to pass on that too. I can eat dishes with bits of meat in them - like casseroles, soups and stews, but gone are the days of meat. potatoes and a vegetable separately. A weird post sx, but one I can live with......

@ Babs, I was happy to try quinoa for more protein to add to my diet. It's my fave food right now and it's so versatile.

@ Dave I've never made veggie burgers from scratch, but have had some decent ones at whole food/veg restaurants. No reason I can't give it a go........

I've been a vegetarian since 1974. I love tofu and never liked the taste of meat even as a child.

I remember when I stopped eating meat the book recipes for a small planet had just been released and my mom in her attempt to insure I was getting my protein made soy bean burgers and served them to my family.

As my dad glared at my head full of hair and red eyes he told my mom if she wanted to make that sawdust for me it was fine, but not to serve that stuff to him again.

I made those things for years. No garden burgers in those days, you'd boil those beans for hours in a pressure cooker and mix them with egg and wheat germ and fry them.

Now that's what I call good eating! Those bean burgers were even better then the cow corn my friend and I hijacked from a local farm after we moved up state ny when we were poor and almost starved.

Being boys from the burbs we couldn't understand why the corn was so hard to chew even after boiling the stuff all afternoon, in addition we had to fight the feral cats we adopted as "pets" from a local farmer for the corn since it was all any of us had to eat.

I remember thinking it was odd that the farmer had to crawl under his house to retrieve our new pets as they clawed and scratched him while he threw them in my car. :)

quinoa is fabulous, complete protein and reasonably cheap. be sure to rinse well. i prefer red quinoa. i make it according to recipe and serve with chopped vegies nuts and vinaigrette made from xvoo. i am not however opposed to filet and bernaise. just hate to waste it since everything tastes like sawdust during tx. i sooo miss my taste buds and appetite!

Your recipe sounds good but I have tried toufu a few different ways and just couldn't get it down after a few bites.  I'm with frijole on this, flguy's dinner sounds tastier

That quinoa recipe sounds delic.
The steak sounds,,,,,,,,,,,, well kind of on the other end of the spectrum, and it sounds like it would take a lot more clean up.

I'm always looking for way to get more protein, but I've never been able to "do" tofu. I may have to give it another try - the firm variety and drained like you do.

Another quick and easy protein recipe:

Cook 1/2 C quinoa in 1 C. water.

Add chopped onion, sliced grape tomates, chopped spinach ( and any other veggie of choice), toss to mix.

Spoon onto sliced avocado slices, drizzle with a lemon juice, olive oil, salt dressing and top with feta cheese.

Very filling without being heavy. Quinoa is my new favorite food these days. Also good with fresh berries and Greek yogurt for a good start in the morning.

A slight variation on the receipe would be to replace the tofu with sirloin steak, the rice with russett potatoes, the Braggs Amino with  a good red wine and for the veggies use carmelized onions with garlic and asparagus with bernaise sauce.  It's likely that you will not need to ponder what to do with 2nd meal.  Wish I had the double fudge and caramel cake receipe handy.
