Do STD symptoms ever come and go?

Here is my situation:  A couple of weeks ago, I posted a question about a bunch of symptoms that came up after an unprotected male/male hookup.  Among them were what seemed to be clear discharge from the penis, the very tip of my penis sticking to my underwear, and a smell that might have been urine and sweat.  I also noticed some light staining on my underwear that didn't look like pus stains.  It looked more like urine stains.

This occurred during the 7-21 day window for chlamydia symptoms to appear, which is partly what scared me so badly.  Then everything went away and stayed away for more than a week, during which that 21 day window closed.  It's now been almost a month since my hookup.

Now it feels like my penis is sticking to my underwear again, and I noticed the light staining again.  Like the last time, when I check I can't get anything to come out most of the time.  If anything at all does come out, it's clear and looks and feels like either pre-ejaculate or prostate fluid.  I tend to notice it mostly after I urinate or ejaculate, but once you notice it, you keep noticing it.  The last time, I was able to monitor myself for almost 8 hours straight during which nothing happened, and I was finally able to convince myself that nothing was going on.  Now I'm worried that something was going on, and it's just coming and going.

Is that even possible?  Do STD symptoms come and go like that, or am I just noticing something because I'm on hyperalert for it?

To recap, here's what's going on:

A small amount of clear discharge, occasionally.

Penis sticking to underwear occasionally.

Some light staining that looks like urine staining on underwear.  It doesn't look like pus.

A smell in the "folds" and under the head of my penis that might be sweat and stale urine.  Can't tell.

I'll also admit that I ejaculate and tasted it to see if anything was off, but nothing seemed to be.  It tasted normal, and I would think that if there was an STD going on, that would make it taste nasty.

I hope I'm worrying for nothing, but I'd really appreciate it if someone could give me some peace of mind.

Forgot to mention:  No burning, no itching, no stinging, no fever... No other symptoms of any kind of infection.
