Low Iodine Diet Help - Please!

Hello everyone,
I am having a very difficult time finding appetizing foods that have non iodized salt or stick to other rules within the diet. Has anyone been on this diet and find some really good foods that stick to the rules? I don't have a whole lot of time every day to cook, so I need something that's relativity easy.  Thanks in advance!

Thanks Trish. Yeah I've printed out the cookbook, thanks.  But most just take too much time or the ingredients are expensive, etc. I bought some rice cakes today actually - lol. I bought the wrong kind of peanut butter at the store the other day, so I'll have to go back I guess. Mine still had salt in it. This diet is hard and I'm hungry - lol.

There is nothing fast and easy with this diet.  I have done it 3 times now and it takes planning to have food on hand for when you need a quick bite.  If you go to www.thryvors.org there is a low iodine diet recipe book.  Lots of fruits and veggies, organic peanut butter and plain rice cakes were my snack foods.  I would make a small stir fry and it would do for 2 meals.  It is not easy but it is healthy.  If you buy a small carton of egg whites you can cook it with mushrooms and spinach and it quite tasty.
