My TSH is 2.97 adn teh Free T3 is 2.28 and was flagged as Low the T4 was .80

Please post the reference ranges for your FT3 and FT4, so we can see where your levels fall within the range. I'm sorry, but just saying "low normal" doesn't help much.
I'm not saying it's impossible to gain weight on synthroid, but you said yourself it's a "rare" side effect, meaning that it doesn't happen very often. You are correct that the fillers often cause issues. I was started on synthroid and didn't do well; do just fine on generic levo.
I'm not sure why your doctor insists that TSH has to be 1.0; that might not be the point at which you are comfortable. He needs to be looking at your FT3 and FT4 and adjusting your med on that basis and alleviating symptoms, more than TSH.

I was given the lowest dose .025 I am not cutting them in half. the bidnign ingredients in the snythorid causes a lot of issues ith people and if you look up the side effects one of the rare ones is weight gain/. I was on it for 4 weeks stragiht and then went off a week and now back on my tsh leveel i just had done was 1.73 but he still wants it to be 1.0 so ha dme cut it in half and go from there. I get lots of hot flashes and heart palpataions and have gianed about 5 pounds on it and it also makes me very very much a high aniety level so we will see.

What are the reference ranges for the FT3 and FT4? These vary from lab to lab, so must come from your own report.
I'm not sure why your doctor would tell you to go completely off the synthroid; would probably have been better to adjust your dosage instead. You have to be consistent in taking the med or you will never know what's working or what isn't.
No, synthroid would not play a role in viral infections; however, if your immune system is "whacky", that could an issue.
Weight gain is a symptom of being hypo, not a side effect from synthroid. If your doctor has other patients gaining weight on synthroid, maybe he's not treating them properly. That said, it IS possible to gain weight even while being hyper.
Again, I don't know how anyone can possibly figure out what's happening when you are going on and off the med. You need to get on a dose and stay there for a few weeks, then retest before adjusting the med again.
What was your dosage when your doctor told you to go off the med? Maybe you just started at too high a dose. If your FT3 is high, it would not appear that you would need a T3 med, but again, those reference ranges are so very important.
