did anyone save the recipe thread we had going? I cant find it since I had to upgrade my software version and lost a lot of favorites. Anyhow I wanted to add to it since I made something really yummy last night (plus, I winged it from memory and added new things and havent wrote it down yet myself and want somewhere to have it down so i can make it again sometime, lol) anyhow here is the newest recipe (Avis maybe you have the thread saved and can bump it up so I can just add it to that one?)
Seafood & Chicken ENchilada Casserole
1 pckg corn tortillas
1 pckg crab delights -cut to bite size
1 can of chicken chunks
2 pckgs of mixed cheese (Montery Jack, CHeddar, Mexican)
2-3 cans of Old El Paso Enchilada sauce (mild Red for the pan, green for on top at table)
2 boxes Old El Paso SPanish Rice
1 can black olives- sliced
6 TBS Ranch Sour Cream Dip
1/2 to 1 pck dry envelope taco seasoning mix
Toppings:
red onions
Sour Cream
black olives
tomatoes
salsa
green enchilada sauce
cilantro
Make the Spanish rice per box directions. While that is cooking, take a heavy (Preferably a non=stick) pan and melt a pat of butter, then add about 2 cups of cheese, a splash of milk, the Ranch Dip, Seafood and chicken. Stir and let it melt (on very low heat so cheese does not scorch). Add taco seasonings until flavor is just right to your taste. Set aside and when rice is done cooking, add about 1 cup of it to the mixture as well.
In large baking 13 x 9 pan, pour some red ench sauce on bottom, then layer with tortilla shells, crab mix filling, black olives (can be omitted if you dont liek them), continue layering like this til mixture is used up. Top with tons of shredded cheese, black olives, cilantro. bake at 350 about 25 mins or until bubbly/done. Serve with the remaining spanish rice as a side dish, and top the casserole on your plate with green enchilada sauce, sour cream, tomatoes, red onions, more black olives.
PS i feel that the ranch dip made all the difference! I kept tasting the mixture and it didnt taste right until i added that. It made it creamy and added just enough flavor that was missing!
