PORKCHOPS
• 6-8 Pork Chops 1 to 1-1/2” thick
• Two Cloves Garlic – chopped
• ½ teaspoon dill seeds
• 1 can Vegetable or Chicken Broth
• Olive Oil
• Two Large Cans of Sauerkraut
Drain Sauerkraut and soak in a bowl of cold water. (This will remove the sour “bite” from the kraut.)
Heat oil in large Dutch Oven or a deep Fry Pan. Season pork chops with your favorite seasoning and sprinkle with paprika. Brown pork chops in oil on both sides until lightly brown. Remove from pan but leave oil and juices. Lower heat, add garlic and sauté until tender. Drain sauerkraut and add to garlic and oil. Stir thoroughly to coat kraut with juices. Add dill seed and stir again. Pour in broth and enough water to just cover the sauerkraut. Place chops on top of sauerkraut around the perimeter of the pan. (They can overlap if necessary.) Cover and simmer until chops are tender, approx. 1 hour or so.
Serve with Garlic Mashed Potatoes
GARLIC MASHED POTATOES
• 6-8 Yukon Gold Potatoes
• ½ c. Sour Cream
• Milk or Half & Half
• 4 Cloves of Garlic - Roasted
• Salt & Pepper
• Parsley
Cook potatoes for mashing, drain. (I always return the potatoes after they are drained back to the heat for a bit to cook off the remaining water.) Smash roasted garlic into a paste, set aside.
Mash the potatoes. (My mother never used a beater for mashed potatoes. She called potatoes beaten with a beater Whipped Potatoes and preferred the texture of hand mashed potatoes.) Add sour cream, milk or half & half, salt & pepper and garlic. Mix thoroughly adding more liquid if required. When desired consistency is reached, add parsley and mix in lightly.

PEANUT BUTTER COOKIES OR PEANUT
BLOSSOMS
1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
2/3 c. shortening
1/2 c. creamy peanut butter
1 c. firmly packed brown sugar
1 egg
1/2 tsp. vanilla
Combine flour with baking powder and salt. B lend shortening with peanut butter in mixing bowl. Gradually add brown sugar, creaming until light and fluffy. Add egg and vanilla extract; beat well. Blend in sifted dry ingredients gradually; mix well.
Shape dough into balls using a rounded teaspoonful for each. Flatten - crisscross style. Bake in 375 degree oven 10-12 minutes. 4 dozen.
Peanut Blossoms: Roll balls in sugar. Place on ungreased cookie sheets. Bake for 8 minutes. Top each cookie with solid milk chocolate kiss.
PUMPKIN COOKIES WITH CREAM CHEESE
FROSTING
COOKIES:
1 c. shortening
1 c. sugar
1 c. pumpkin
1 egg
2 c. flour
1 tsp. soda
1 tsp. cinnamon
1/2 tsp. salt
FROSTING:
1 tbsp. vanilla
1 lb. powdered sugar
1 stick butter
8 oz. cream cheese
Cream shortening, sugar, and pumpkin. Add egg and mix well. Add sifted dry ingredients. Drop from spoon onto cookie sheet. Bake at 375 degrees for 10-12 minutes.
Beat frosting ingredients until smooth. Frost cookies after they have cooled.
Makes 48 cookies.
