The vets have definitely missed something here. Have xrays been done, ultrasound, or a worm check been done. Sometimes the worm check needs to be done multiple times. And, if the cat was/is indoor outdoor, then a test for Giardia needs to be done. Giardia can cause all of the symptoms that you describe.
Also, an ultrasound may need to be done as well.

Your cat may also need some medication for her IBS. My cat takes Budesonide in liquid form everyday. She has the other problem of constipation, but I give her miralax. Ask your vet if the Budesonide would be indicated for this condition...I think she sounds like it is pancreatitis or Irritable Bowel. Fairly common in cats. My cat is also on Hills Z/D food only.
I know some do not favor this food but it works for my cat along with the Busesonide....so I am a believer.
Sometimes feeding your cat some boiled rice for a few meals will help with the loose stools--you can cook it in chicken broth.

Yes there is, it's a human supplement but safe for cats. Comes in powder form, needs to be mixed with some water to make a gruel than give by dropper. Called slippery elm bark, I buy the NOW brand from iherb.com in California, but if you have a good supplement store locally see if they have the powder there, if you order or find some let me know I will tell you exactly how to prepare and how much to use
