Difficulty swallowing has been reported, both with ankylosing spondylitis and following surgery of the cervical spine.  Your husband may be right that food may be lodging in his chest, specifically in his esophagus.  You should request that his doctor request consultation with a gastrointestinal specialist, called a gastroenterologist.  You should do this without delay, as with such trouble swallowing, there is significant risk of aspiration of swallowed food or liquid into his windpipe and lungs.
