My doctoc told me my Ai is a 3 and I was newly diagnosed as diabetic. Since then been tracking my BG levels. I have been noticing the past month now that my BG goes down a lot. Sometimes even after taking regular Coke it would be at 68. Lowest I have seen it go down is 51

Dont know what an Ai is did you mean an A1c?
3 is pretty low and diabetes is usually hi BG (over 5.8)
you have reactive hypoglycemia. eat carbohydrates pancreas makes insulin but keeps producing insulin beyond what is needed thus driving BG down.
